Cada vez es mayor el número de personas que optan por hacerse vegetarianos en alguno de sus distintos tipos (vegano, vegano dietético, ovo-lacto vegetariano o lacteo vegetariano), eliminando de sus dietas carne, pollo, pescado y sus productos derivados, e incluso huevos y productos lácteos. La alimentación pasa a fundamentarse principalmente en los vegetales.
