La presencia de parásitos crudos en el pescado que se consume normalmente supera el 50%, pudiendo dar lugar a cuadros graves. Cuando el causante es el anisakis, da lugar a la enfermedad denominada anisakiosis y está relacionada con la ingesta de pescado crudo o poco cocinado, salazones o conservas en vinagre.
